Amaranth and “Fairy Popcorn”

Amaranth can be popped in a pan the same way as corn; it easily burns so stir it often. The tiny popped kernels are delicious and nutritious and much beloved by students. Amaranth is fun to thresh and a good activity for any age. Some people have mild allergies to the flowers of Amaranth, and will feel a very mild tingling or burning on the skin. Wash hands and/or wear gloves and don’t touch your eyes!
We also mix a little amaranth in with the quinoa and cook it like rice in a pot on a hot plate in the garden.
